Taste & texture

The paste is rich and milky, with sour-cream tang, butter and a restrained salty-blue finish. Unlike some triple creams, no extra cream is added: the richness comes from the cheese itself.

How to serve it

Serve at room temperature with pears, walnuts or good bread. It is also excellent stirred through pasta or risotto.

What to drink with it

Moscato, Vin Santo and other sweet wines work well. Champagne is a fresher alternative.

Pair it with

Fruit and floral sweetness soften the salty blue spice, while something crisp keeps the pairing balanced.
