Cabécou takes its name from the Occitan word cabre (goat), and it perfectly represents the tradition of small-format goat cheeses from the south of France. Produced by Chèvrefeuille in Occitanie, this cheese celebrates the pastoral landscapes and centuries-old know-how of the region. These tiny disks have long been a staple of farmhouse tables in the southwest, savoured fresh or slightly matured depending on the season.

Method and Maturation

Cabécou is made from pasteurised goat’s milk and lightly salted before developing its thin, natural rind. The cheeses are often enjoyed young, when the paste is still soft, lactic, and fresh. With time, they become creamier under the rind and develop gentle earthy aromas, gaining complexity while remaining approachable.

  • Texture: Soft and supple, with a creamy breakdown under the rind as it matures.

  • Flavour: Delicate, lactic freshness with subtle notes of hazelnut and a gentle tang. With age, a more pronounced earthiness emerges, balanced by the goat’s natural sweetness.

  • Aroma: Mild and milky at first, evolving towards undergrowth and cellar notes with ripening.

Pairings and Service

  • Wine: Best enjoyed with crisp white wines such as Sauvignon Blanc or a dry Chenin from the Loire; also pairs beautifully with a light red like a Gamay.

  • Food: Lovely on a cheese board with a drizzle of honey, or warmed slightly on toast with a fresh salad.
