At a glance

Texture: Rich, buttery and lightly crumbly

Taste & texture

The paste starts creamy and smooth, then the blue veins bring salt, spice and earthy depth. Sheep’s milk adds natural richness and a faint sweetness.

How to serve it

Serve at room temperature so the paste softens and the sweetness becomes more obvious. It is excellent with pears, toasted nuts or rye bread.

What to drink with it

Sauternes and other sweet wines are classic partners. Tawny Port also works beautifully.

Pair it with

Fruit and floral sweetness soften the salty blue spice, while something crisp keeps the pairing balanced.
