Taste & texture

The goat’s milk gives the cheese a lively, lactic start. Blue veining adds measured saltiness and spice, while the texture stays creamy rather than dry.

How to serve it

Take it out of the fridge around 30 minutes before serving. It works well with rye bread, pears or walnuts.

What to drink with it

A dry aromatic white with freshness, such as Sauvignon Blanc or dry Jurançon, keeps the goat’s-milk tang lively. Sweet dessert wine also works if you want contrast.

Pair it with

Fruit and floral sweetness soften the salty blue spice, while something crisp keeps the pairing balanced.
