Coming from regional Victoria Christmas has always been scorching hot, similar to Jerez in Spain. We like to start with a dry aperitif-style sherry as we usually begin with fish or cured meats, nuts & olives and this fino is perfect for that.
Tracklements Strong Horseradish Cream
This is always in my fridge and is great with City Larder Chicken Terrine, mackerel/sardines, with most leftovers, in sandwiches or even mixed through mayonnaise for potato salad - so versatile.
