Rogue Creamery Special Reserve Blue – A Seasonal Benchmark
One of the great pleasures of specialty cheese is seasonality. While many cheeses are available year-round, a few appear only briefly, at a very precise moment. Rogue Creamery Special Reserve Blue is one of those rare arrivals. Released once a year, in very limited quantities, it is widely regarded as a benchmark blue cheese and we are very pleased to welcome it back at K-SEIN Fromagerie.
This organic blue cheese is produced in Central Point, Oregon, by Rogue Creamery, and only for a few weeks each autumn. At this time, the creamery’s single herd of Brown Swiss and Holstein cows reaches the end of its natural lactation cycle. The milk becomes richer and more concentrated, carrying the aromas of the surrounding pastures along the Rogue River — native grasses, clover, hops, blackberries and wild herbs.
After salting and piercing, each wheel is carefully wrapped by hand in local organic Syrah vine leaves. These leaves are macerated in organic pear brandy before being applied to the cheese. The cheeses are then aged for a minimum of eight months in the creamery’s cellars.
The result is a blue with a moist, creamy texture and a deep but balanced blue profile. The flavours are layered and expressive, with notes of pine, wild berries, hazelnut, morel mushroom and pear, all coming together with remarkable harmony.
Produced in Oregon along the banks of the Rogue River, Rogue Creamery’s blue cheeses are made using certified organic whole milk and a strong commitment to sustainable farming.
