Livarot is a legendary cow’s milk cheese from Normandy, crafted by Fromagerie Graindorge in the town of Livarot itself. With its deep roots in Norman cheesemaking tradition, Livarot has earned its place among France’s most cherished cheeses. Often nicknamed “Le Colonel”, this cheese owes its moniker to the five strips of rush or paper that encircle its rind, reminiscent of the stripes on a French colonel’s uniform.

  1. Milk and Coagulation

    • Made exclusively from cow’s milk, Livarot develops its characteristic flavor and texture through a carefully monitored cheesemaking process.
  2. Affinage

    • Livarot is aged for 6 to 8 weeks, during which its rind develops a striking orange color, thanks to the application of annatto or a similar natural coloring. The cheese is regularly washed during its maturation, encouraging the development of a sticky, aromatic rind and enhancing its intense flavor.
  3. Presentation

    • The cheese is wrapped with five strips of rush or paper, both to help it maintain its shape and as a nod to its cultural heritage.

Livarot has a soft and supple texture, with a creamy, slightly elastic paste that becomes silkier as it warms. The flavor is robust and full-bodied, offering earthy, meaty, and slightly tangy notes, underpinned by a pleasant saltiness.
