Boerenkass is a hard cheese from the Netherlands and matured for a minimum 36 months. Dotted with bitey crystals called tyrosine which are amino acids that naturally occur during the ageing process. A dense, nutty, caramel paste, creamy texture with bursts of salt-like crystals in the mouth.
