OAl Blue is the hero of the Berrys Creek dairy - it is their most awarded cheese in the range. The hallmark of this cheese is its perfect balance of spicy blue, creamy texture and salty tang. The firm blue cheese develops a rich buttery texture as it matures and becomes interspersed with dark blue veins and a slightly earthy flavour.
A little history
Oak Blue takes its name from the massive oak tree nestled amongst the rolling green hills of South Gippsland. Cheese maker Barry Charlton - aka The Australian King of blue cheese - and his partner Cheryl Hulls started specializing in blue cheese when they opened Berrys Creek Gourmet Cheese in 2007. Despite no prior experience in making blue cheese, Barry’s vast cheese making experience paid off when his new blue cheeses started winning awards at cheese competitions all around the country. In addition to Barry’s skill as a cheesemaker, the key ingredient to achieving the rich golden colour of the cheese comes from the quality milk sourced from South Gippsland, one of Australia’s highest quality milk producing regions.
Ingredients: Pastuerised cow's milk, salt, cultures, non animal rennet.
