This farmhouse cheese takes its name from Lake Mokoan, a shallow dam near the farm that has since been transformed into the Winton Wetlands.     • The cheese is enveloped in a wrinkled white mold rind, which protects and enhances the soft-ripening process. When young, Mokoan Night is firm and chèvre-like, but as it matures, a silky, gooey layer develops beneath the rind, adding depth and creaminess.
