La Vecchia Dispensa – 20-Year-Aged Balsamic Vinegar of Modena

 

Produced in the medieval village of Castelvetro di Modena, La Vecchia Dispensa is among the oldest balsamic vinegar factories in the region, holding production licence number 13 since 1905. For generations, the Pelloni and Tintori families have patiently aged balsamic vinegar in wooden barrels, preserving a savoir-faire passed down as a family inheritance.

This balsamic vinegar is aged for 20 years in a succession of ancient barrels made from aromatic woods. Over time, the cooked grape must of late-harvest Trebbiano and Lambrusco grapes slowly concentrates, gaining both depth and structure.

With a density of 1.35 kg/L, this vinegar is naturally thick and glossy — a clear indicator of long ageing and careful evaporation. The texture is dense yet fluid, coating the palate with natural sweetness, layered complexity, and a finely balanced acidity.

A classic and highly regarded pairing is a few drops over Parmigiano Reggiano, where the vinegar’s richness enhances the cheese’s savoury, crystalline notes without overpowering them. It is equally suited to finishing dishes where precision and intensity are key.

Produced exclusively from cooked grape must and certified organic since 2002, this 20-year-aged balsamic vinegar is a precise and authentic expression of Modena’s heritage.
