Tomme Welsche au Riesling is a young mountain tomme from Alsace, produced by Fromagerie Haxaire and gently aged for around five months. Washed with local Riesling during maturation, it remains clean, balanced, and comforting rather than bold or pungent.

The Riesling wash brings freshness and lift—not sweetness—resulting in a cheese that feels rustic and honest, with just enough personality to keep things interesting.


Terroir

Made in Alsace, this tomme reflects the region’s mountain traditions and white-wine culture. The influence of Riesling shows in the cheese’s gentle acidity and clarity, complementing the milk rather than dominating it.


Texture, Aroma & Flavour

Texture: Supple and flexible; semi-firm without being dry.
Aroma: Clean and lightly fermented, with soft nutty notes that can recall Emmental.
Flavour: Young and fruity, mildly nutty, with a subtle acidity on the finish. Not long on the palate, but very pleasant and refreshing.

Despite its regional link to Munster, Tomme Welsche au Riesling stays firmly on the mild side—no heavy funk, no aggression.


Melting & Uses

This tomme melts beautifully. It’s excellent in toasties, over potatoes, or folded into simple warm dishes. A reliable all-rounder that works just as well sliced on a board as it does in the kitchen.
