The name Fleuret suggests lightness and delicacy, which is exactly what this cheese offers—an elegant balance of creamy indulgence and rustic authenticity.

Method and Affinage

Fleuret is gently matured in its own small wooden box, which allows the cheese to continue ripening while being protected. This box not only helps retain moisture but also enhances its earthy aromas as the rind develops naturally. The cheese evolves steadily inside, becoming increasingly luscious with time.

At its youngest, Fleuret is tender and creamy. As affinage progresses, the paste becomes almost molten, with a texture reminiscent of soft fudge near the core. The rind remains fine and delicate, never harsh, underscoring the cheese’s subtle rustic character.

Taste and Texture

  • Texture: Soft and creamy, often flowing when cut; fudgy at the centre when more mature.

  • Flavour: Clean and fresh at first bite, with a gentle lactic tang typical of goat’s milk. As it ripens, the flavour deepens into earthy, vegetal notes with hints of mushrooms and a lightly tangy finish.

  • Aroma: Mildly goaty with undertones of fresh hay and woodland.

Pairings and Service

  • Wine: Enjoy with a crisp Sauvignon Blanc (Loire Valley or Bordeaux), or a light, mineral Chardonnay. Sparkling wines also work beautifully.

  • Food: Spread onto crusty baguette or rustic country bread. Lovely alongside a drizzle of honey or fig jam.

  • Cheese board: Ideal between milder soft cheeses and stronger blues, as it bridges the gap with both creaminess and complexity.

A Gentle Indulgence

Fleuret is more than just a creamy goat’s cheese—it is a reflection of the Dordogne’s cheesemaking tradition and terroir. Its wooden box makes it an elegant centrepiece, while its evolving texture invites you to revisit it at different stages of maturity.

Whether enjoyed fresh and lactic or fully runny and bold, Fleuret is a cheese that rewards patience and curiosity.
