This semi-soft sheep milk cheese from the French Mediterranean island of Corsica sports a herb crust across its pale ivory paste full of flavour.

Fleur du Maquis (FLEHR doo mah-KEE) is an unusual ewes milk cheese from the French Mediterranean island of Corsica - you can taste the mountainous coastal grass that the sheep graze on in every mouthful. The pale ivory paste of Fleur du Maquis is coated with a mixture of local dried herbs and changes from fresh and creamy when young to a moist but firm cheese as it ages and as the seasons change. As it matures the herb-coated rind grows a velvety grey, slightly mouldy crust.

A little history about Fleur du Maquis

Fleur du Maquis translates as “flower of the Maquis”. Maquis is a French term for thickets of rough underbrush that grow throughout the Corsican countryside. This cheese is made to a traditional recipe that has survived from the first millennium. The handmade cheese is drained for 2-3 days, salted and covered with wild herbs such as rosemary, thyme and savoury picked from the local maquis.

Fleur du Maquis is sometimes known as Brin d’Amour, meaning “bit of love”.

Ingredients: Pasteurised ewe's milk, salt, cultures, animal rennet.

Love this cheese!

I love the combination of ewe’s milk cheese and wild Corsican herbs from the ‘maquis’. This cheese has a real ‘gout du terroir’. Unique!

We hope to get some more really soon!

Amazingly delicious

Tried this for the first time recently and loved it, happy to see its back in stock! Hard to explain its texture somewhere between a soft and hard cheese kind of chewy and flavour from herb crust is delicious

Delicious, and different

This is probably not what I'd have initially picked - but I'm so pleased that I did. It wasn't like anything that I'd tried before. It was complex, but also very enjoyable to eat. This would be a top pick if you are looking to have a cheeseboard a bit more interesting than soft/hard/blue - or even just a cheese on its own.
