Moulin des Moeres is a hard cheese from the Netherlands and matured for a minimum 24 months. Dotted with bitey crystals called tyrosine which are amino acids that naturally occur during the ageing process. A dense, nutty, caramel paste, creamy texture with bursts of salt-like crystals in the mouth.

Moulin des Moeres is an aged gouda selected by Cesar Losfeld. The Losfeld family have been refining cheese in their cellars in Roubaix, France since 1871. Each year, over 100 000 cheeses are meticulously cared for using their 'savoir faire' of 'affinage' or 'refinement' of cheese in their cave - once a simple textile-factory.

Refining cheese is an expert skill where the humidity, air and surrounding environment of cheese is carefully controlled, to ensure the bacteria and microbes are able to play their part in the ageing process.

The cheese refiner's role is an important step in order to create the desired flavour and texture the cheese-maker intends, before it is ripe for consumption by the general public.

Through three generations, Cesar Losfeld has become renowned for their utmost quality and craftsmanship.
