CASHEL BLUE
Cows milk, County Tipperary, Ireland
Cashel Blue is one of Ireland’s best loved cheeses. and has a rich and voluptuous creamy texture. The cheese is golden yellow and well marbled with vibrant green-blue mould. The flavour offers the perfect balance of creamy cheese and spicy blue, balanced with a salty tang. The cheese is made in a 100-year old copper vat and they use locally source milk from their own herd of pedigree British Friesian cows and local farms.

SHEPHERD’S STORE
Ewe’s milk, County Tipperary, Ireland
Shepherd’s Store is a semi hard ewes milk cheese from the makers of Cashel Blue. A traditional, European style semi-hard cheese handmade from 100% Irish Friesland sheep’s milk, only made during the ewes lactation period from February to September. During maturation, Shepherd’s Store is washed and turned by hand every week for 6 months, until it reaches a balanced flavour and is ready to enjoy. The resulting cheese offers a with a full flavour, smooth texture and a complex mix of both savoury and gentle, sweet notes. More reminiscent to the Pyrenees style cheeses than Manchego or Pecorino, this is a distinctly Irish traditional farmhouse cheese.
COOLEA – selected by Neal’s Yard Dairy
Cows milk, County Cork, Ireland
Coolea is a hard cooked cheese that mirrors traditional Dutch Gouda, made by the Willems family who relocated from the Netherlands to County Cork in the 1970s. The milk is sourced from a nearby farm with the best cheese made in the summer months, when the weather is drier. The dense texture is smooth in the mouth, and the flavours are complex, ranging from rich and sweet, with hints of hazelnuts, butterscotch and honey, to nutty and lingering with a savoury finish.

Irish Brown Bread Crackers Crackers are Sheridans Cheesemongers signature cracker. Made with just 4 traditional Irish ingredients - stoneground flour from Macroom Oatmeal Mills, butter from Bandon Cooperative and buttermilk from the Cronin Family Farm, all in Belgooly, County Cork. Our Brown- Bread crackers are handmade for us in West Cork and salt. These crackers are the taste of Ireland. An excellent addition to your cheeseboard, well suited to robust cheeses, particularly Cashel Blue.
