February's Cheese Subscription highlights some of Australia's best cheesemakers - Section 28, Berry's Creek Gourmet Cheese & Woombye Cheese Company.
The Australian Grand Dairy Awards represent quality, excellence and innovation in Australian dairy produce. Held annually, these awards recognize the finest dairy and cheese products from around Australia. We have chosen 3 of our favourites to include in our monthly Cheese Subscription.
Woombye Cheese Company is based in the sunny Sunshine Coast Hinterland in Queensland. Using local cows milk, they make a selection award winning handcrafted cheeses. This washed rind cheese has a rich buttery paste and mild flavour whilst young, developing into a more robust cheese as it matures. Washed rind cheeses are traditionally washed in a brine solution during maturation as this encourages the growth of microorganisms on the rind of the cheese. These microorganisms are responsible for the typical orange rind and overall stinkiness of washed rind cheeses.
Berrys Creek Gourmet Cheese specialise in making blue cheeses. Located in the rich dairy region of South Gippsland, Barry Charlton and his partner Cheryl started the company in 2007 and have been experimental in their cheesemaking, creating the first buffalo milk blue cheese in Australia. Two of their cheeses won awards this year - Riverine Blue (their buffalo milk cheese as featured in last months subscription) won 'non bovine' , whilst Tarwin Blue - named after the Tarwin River - reflects earthy qualities especially on maturity with a lasting intensity and a texture full of soft, smooth appeal.
Section 28 Artisan Cheese is based in the Adelaide Hills in South Australia. Cheese maker Kym Masters traded his corporate life for the challenge of making European style hard cheeses after spending time in France and Italy. Monforte is based on hard mountain style cheese - these wheels have been matured for 10 months and have developed a rich creamy flavour with grassy overtones.
Sheridans Irish Brown Bread Crackers have been specially created as the perfect match for cheese. Sheridans is an Irish Cheesemongers with a number of shops across Ireland. Made from just 4 ingredients including buttermilk - the essential ingredient in Irish Soda Bread - these are the ideal accompaniment to these fantastic Australian Cheeses.
